Another Meal (for February) - Taco Salad

After this meal - I am officially caught up for April!!!

One of my favorite meals is Taco Salad - normally I'd have them with Tostitoes - but since I am trying to follow the Paleo way of eating - I omitted the tostitoes & the sourcream. I did however add a bit of cheddar cheese (cheese is by far my vice). This meal is so quick and easy.



For dessert I made a frozen berry mixture

Again, this berry mixture is extremely easy! This also satisfies my sweet tooth.


Taco Salad Recipe:
  • 1 pound of ground beef/venison - cooked on frying pan. Once cooked add homemade taco seasoning
  • 2 green onions chopped
  • 1 tomatoe diced
  • 1/4 cup of chedder cheese grated
  • bowl of lettuce
Frozen Berry Mixture:
  • 1 cup of mixed berries
  • a couple of drops of vanilla extract OR have a dropper of stevia
  • sliced almonds
*Blend the berries and vanilla until mixed. Put in freezer for 30 minutes. Remove and garnish with sliced almonds

The LIFE Revolution - Book 1 Completed!

#13 on my list is to read 30 books. I'm bit behind on my reading. I am currently trying to complete the first course to get my Registered Health Underwriter (RHU) designation - which consists of 3 books. I have been procastinating, and everytime I pick up a book for pleasure, I feel guilty because I know I should be studying! I have finished the first module and have 3 more modules. The course needs to be completed by April 27th..... time is going by so fast! I will post once I complete these 3 books.

Last night I decided to kind of cheat and read an e-book that was under 100 pages! The book was called The LIFE Revolution. It was a basic introduction to why one would want to do an intermittent fast (IF) This book came at a perfect time, because I had just completed an fast with one of my co-crossfitters Dan Allaire (http://www.dansquestforfitness.wordpress.com/).

Family Wealth Planning Package

Finally - I get to scratch another thing of my list! #44 - Get a Will done! Getting a Legal Will done was always on "my list of things to do". Going to Mexico (and this 101 list) kind of put the fire under my butt to get it completed.

I decided to get our Will done by Michele Allinotte from Allinotte Law Office, http://www.allinottelawoffice.com/. Below is a photo of Michele and I (I'm holding my new Family Wealth Planning Package!) Michele was great and made us feel very comfortable!



Sitting down with my husband Marty to discuss our wishes was a weird feeling at first - but it turned out to be a great experience. A lot of it, we just assumed we knew what the other wanted - but I think we learned a lot. It forced us to discuss things we wouldn't normally discuss. Marty felt it a little morbid talking about dying - I felt getting everything organized and knowing things would be taken care of should something happen to either of us (or both of us) gave me a sense of relief. It was a serious conversation - and at the same time we had a lot of laughs.

We don't plan on dying - but nobody does! You just never know!



Another Meal (For December) - Omelet with Spinach

I'm getting caught up with my meals! This meal is to make up for my December meal.

Eggs are staple meal for my Paleo eating lifestyle. I have them often. I try to buy the free-range eggs - I figure these are the best choice in store.

Very easy to make: Eggs-spinach-salsa-and almond butter cooked in a pan with Organic butter. I occasionally will put a little bit of feta in the omelet.



I LOVE eggs! I must say this was the best looking omelette I've ever made. Many times I do not have the patience and my omelet turns in to scrambled ;)

Another Meal (for November) - Kyle's Tuna 'n' Cashew

Okay, since I'm so behind on my meals, I'm going to play a little catch up. I made this particular meal last night for dinner. I've made it many times, but never took a photo and claimed it as my "one meal per month for my 101 list".

Kyle Pichie from Cornwall Crossfit (http://www.cornwallcrossfit.com/), posted this Paleo recipe one day on Facebook: Tuna, Cashews, Dressing all mixed together.

Sounded so good I had to try it and loved it! Last night I added one more ingredient - watercress, the superfood http://bit.ly/cqfBEX .


Recipe:

1 Can of Tuna
2 cups of watercress
1/4 cup of cashews
2-3 tbsp of Farmboy's Lemon Garlic Dressing


Instructions:

Blend watercress, cashews and half of dressing in blender.
Mix blended mix with Tuna
Drizzle remaining dressing on Tuna mixture
Garnish with 3-4 whole cashews





Very TASTY!

March Meal - Almond Banada Pancakes

I visit Marks Daily Apple regularly as he has some very good information about eating clean & primal. When I'm eating Paleo-Style, I feel so much better in terms of mood, energy, seep, awareness etc. My Crossfit workouts are amazing, and my body composition changes drastically. My goal is to maintian a 90/10 Paleo Lifestyle. (BTW, me, holding a Heineken beer bottle on the front page of my blog would be me during the 10%!! HA!)

This month I decided to post a breakfast meal. I've been making this meal - Almond Banana Pancakes - for quite some time now.

Beautiful Sunset

Watching a sunset was #54 on my list. There were plenty of opportunites in Mexico - as every day between 6:30-7pm we had full view of the sun setting.

Living by the water, you would think I would have seen a sunset before (and a sunrise), but suprisingly enough I have not.

Below is something that we witnessed almost every night. However this particular night we were on a cruise.




Passport - check

In order to go to Mexico - I needed to apply for a passport. This was #43 on my list. I heard horror stories that it would take such a long time - but it only took 2 weeks! :)



Hiatus is OVER!

It's been a month and a half since my last post. After my vacation in Mexico - I found it hard to get back in routine!


That being said - qualifying for convention with The EDGE Benefits was #11 on my 101 list. January I recieved a package with the Itinerary, matching shirts, and a brochure to Vallarta Palace Hotels with plane tickets for my husband and I.

This was the first plane ride for my husband. I think he did rather well! We met a wonderful lady named Margo who offered to take our picture!

This was the first time going to an all inclusive resort - and it was a great first experience. The Edge Benefits had some things planned for us - but other than that it was very relaxing. Below are a few more photos.
