Gram's Potato Stuffing!

Every special occasion at my grandmothers - she makes potato stuffing that nobody can duplicate.  Everyone in my family would eat Gram's stuffing for all meals - breakfast, lunch, dinner, snack,....whatever. It's THAT good!:)

Thanksgiving weekend  - I asked my grandmother to show me how to make her potato stuffing.  She told she makes it different every time and doesn't follow a recipe.  Oddly enough - it tastes the same everytime.

With country music in the background & lots of laughs, I finally learned how to make Gram's potato stuffing!

RHU Completed!

As a sales consultant for a company that specializes in living benefits, it was important for me to get my RHU designation.

RHU stands for Registered Health Underwriter, and basically means I specialize in living benefits (disability insurance, critical illness insurance etc) and I can now put RHU next to my name on my business cards.

I completed the designation on May 30th, 2010. Below is the certificate that is currently hanging on my office wall.

The RHU Designation certificate looks better than my Bachelor of Commerce Degree !

RHU (Registered Health Underwriter) Designation

I am currently working on the RHU designation  (which is #12 on my list).

RHU stands for Registered Health Underwriter and basically means that after completing the RHU program, I would be a specialist in Living Benefits (disability insurance, critical illness insurance, health/dental insurance, long term care).  

The program consists of 2 courses - and I completed the first course a couple of weeks ago - check out my course completion certificate: Certificate of Completion I am currently working on the 2nd course - which I will have done by June 3rd. I will then be able to scratch #12 off my list!!

By completing the above courses I've already read 3 books - which also means that I'm working on #13 at the same time!

April Meal

April's meal was fabulous and easy!  Homemade battered chicken and broccoli walnut salad.

The chicken recipe came from my friend Dan's blog - Dan's Quest for Fitness . Rather than me retyping it here - check out his blog. He has detailed a step-by-step process with photos for each step. I was amazed at how easy this recip was.

The brocolli salad came from the Paleo book - by Dr Loren Cordain - such an easy recipe that i don't follow the exact measurements anymore. 

This is what I do - "freestyle" -

2 carrots chopped
1 stalk of brocolli chopped
1 white onion chopped (love onions!)
1/4 cup of walnuts chopped
walnut oil

Mix all together in frying pan and sautee until cooked.















With an easy dinner  - comes an easy desert! Fruit salad! Use whatever fruit you enjoy!

Cloud 9

For those of you who don't know me, I am someone who is on the computer quite often. I am often  emailing/texting/pinning from my blackberry. I also tend to slouch a little more than I'd like to.

For this reason, at times, my neck, my right arm and shoulders tend to tense up. 

I normally get an ion cleanse  (I'll explain further in another post what this is) from Ted Casselman, who is a holistic health practitioner and owner of True Nature Health, http://www.truenaturehealth.com/ . I asked him if he could give me a deep tissue massage focusing on those three target areas that I was having problems with.  I was astounded at how much better my neck and arms were feeling.

Getting at least 10 massages per year is #58 on my list. Ted's massage would be my 3rd massage so far.  I'm definitely going to make massages a normal routine - perhaps even on a monthly basis. After only a 30 minute massage by Ted, I was on cloud 9 for the rest of the day! :) Thanks Ted !! Next time - 60 minutes!

Hello Valpolicella - Welcome Tradition!

One of my good friends won a bottle of Valpolicella at an event, so we decided to drink it together on Friday, April 2nd. We always have a good time when we are together, but this particular Friday was special. So special, that I thought it would be perfect to start a tradition!

Starting a yearly tradition is #52 on my list! I have decided (and my friend is in agreement) every year on Good Friday we will get together at her place and drink some Valpolicella!

Below was the Valpolicella we drank:

Not blaming Valpolicella, but Good Friday, has now become Fuzzy Friday! Just sayin'.... ! :)

Crossfit WOD's

I was noticing that the first 6 items on my 101 list are directly related to being "cross fit". That being said - I will continue to update my blog with my crossfit workouts. This will allow me to keep track of my personal records and monitor any improvements or challenges that I may be experiencing (most likely due to nutrition)

I typically try to go to crossfit at least 4x per week. My last workout was on Wednesday. This was the WOD (workout of the day):

  • 5-5-5-3-3-3 Deadlift

Cashout (an optional workout after regular workout)

3 rounds for time:

5 burbees
10 hollow rocks
15 box jumps

I have been 100% Paleo and experienced a personal record for Deadlift at 115lbs. My time for the cashout was 5:10. Even though I used the medium box - the cashout killed me!
